Menu Plan Monday

Happy New Year’s! I only made a couple resolutions for this year, but one I do have in the back of my mind is to START EATING BETTER AGAIN! Ha! I was going to start calling 2009 the year that made my butt fat. The holidays were brutal – you know, with all that good food to eat. You can’t pass up the mashed sweet potatoes with all their marshmallow gooey-ness or the cookies that only come around once a year with their powdered sugar. But, I told myself, “Christine, lets eat now and we will work it off coming of the new year”. And that is what I intend to start doing by eating healthier for a great start to a New Year!

Can healthy eating be done frugally? Of course! First, plan your menu around the grocery sale’s ad. This is a huge saver for me. Right now, squash and asparagus are on sale. Yummy! I have squash to adorn my Thursday’s plate with that yummy teriyaki chicken.

Then, I make sure my plate is filled with 1/3rd veggies, 1/3rd grains, 1/3rd meat or meat alternative. Sometimes, I can even go 2/3rd veggies. I love my veggies! Many of times, I include a green salad with my meals. Top it with a simple vinegarette and cracked pepper.

Buy quality choice meats but slice them up at dinner instead of opting for a big cut on the plate. I did this in our family not only to save money, but to save on health. My family was consuming too much red meat. Not healthy. So now we will cook a couple steaks and slice them. Each person consumes about 1/2 a steak and doesn’t ever complain that there is not enough.

Healthy snacks – cut up those veggies when you come home and bag them to make them for easy grabs. Buy nuts and dried fruits at Trader Joes or Fresh & Easy (they are much cheaper at these places) then your local store. Put a bowl of fruit on the table. Kids love to go for what is available at a moments notice.

As you can see, it is easy to go healthy on a frugal budget. Give it a try. Not only can you save money but you can feel great at the same time from having better health!

  • Sunday: Baby back pork ribs, baked beans, and macaroni salad (um… ya, not tonight)
  • Monday: Marinated steak, baked potato, and steamed broccoli with lemon pepper
  • Tuesday: Homemade Macaroni & Cheese and a green salad full of veggies, cranberries, and toasted pumpkin seeds (and a small portion of that pasta)
  • Wednesday: Tacos filled with black beans, lettuce, tomato, avocado, green onions, and olives
  • Thursday: Teriyaki chicken, brown rice, and veggies (probably zucchini and yellow squash)
  • Friday: Chili dogs and fries (I think I’m gonna have my self a salad and a couple of toasted baguettes)

Menu Plan Monday

Southern California lends for a warm Christmas day. It is suppose to be upper 70s with sun. This can make it tough to get into the holiday spirit. So, to get my spirits up, I enjoy baking cookies with my daughter. For this menu, I chose to share my favorite holiday cookies recipes – tried and true – I know they work.

  • Russian Tea Cakes – the simplest cookies to make and always a big hit with everyone
  • Oatmeal Raisin Walnut Cookies – who doesn’t love a batch of these cookies?!
  • Snickerdoodles – these cinnamon sugar yummies are great to make all year round
  • Ginger Cookies – this is a first for me. I decided that I am going to make a batch for my mother for when she comes over on Christmas day. It’s always been a favorite cookie of hers.
  • Rice Krispies Treats – Another favorite treat! You have to use Jet-puffed marshmallows and the Trademark Rice Krispies – no subs!
  • Traditional Christmas Dinner – this will be the first time I am cooking Christmas dinner – Wish me Luck! Turkey, ham, sweet potatoes, stuffing, gravy, green bean casserole, mashed potatoes, jellied cranberries, crescent rolls, pumpkin pie with Cool Whip – did I get everything? Let see if I can coordinate everything to be ready at the same time. Oh ya, don’t forget the thin mint cookies shots: 1/3 each Bailey’s, 1/3 creme de cacao, 1/3 creme de menthe. Yum! Taste just like the Girl Scout cookies, but for adults. πŸ™‚

Menu Plan Monday

It’s that time again – Menu Plan Monday! Due to holiday season being in effect, the Money Funk household is taking it easy with a couple of slow cooking recipes and one casserole – and they couldn’t be yummier! (the Mexican Cornbread casserole is a new one to me – I’ll be sure to let you know how it goes)

  • Sunday: Steak, baked potato with sour cream, cheddar cheese and chives, and veggies
  • Monday: Chinese Lemon Chicken (slow cooker), white rice, and broccoli
  • Tuesday: Mexican Cornbread Casserole with a green salad
  • Wednesday: CPK (California Pizza Kitchen) BBQ chicken pizza and a green salad
  • Thursday: Super Simple Cranberry Roast (slow cooker), mashed potatoes, and veggies
  • Friday: Eat out – have to run out of town for the evening
  • Saturday: Hot dogs with shoestring fries


How are the holidays treating you? We are just finishing up the shopping here. Still need to get our tree, but the rest of the decorations are shining. The week before Christmas we are going to be baking fools – the daughter and me. I’ll be sure to post my favorite recipes this week. If you read, “How we are surviving the holidays without credit cards“, then you’ll figure out what I am baking. I think I listed Russian Tea cakes twice. LOL. And they are the simplest cookie to make, too.

Menu Plan Monday

So, did you all get your Holiday Cards mailed out? Ya, I am behind too. We just bought a 40 pack for $14 at Target. They are really pretty, too. Hopefully, my husband, with wonderful penmanship, will sign all the cards by tomorrow and I can mail them out. *cross fingers*. We did decorate our house today. Looks beautiful! We plan on getting our Noble Fir tree this week. Then it will look really pretty.

Hey, Santa just came down our block with 7 fire engines, the Grinch, and the dog. I love how they drive around the neighborhood every year for the kids. It’s really very cool. I don’t mind my taxes going for that.

Now, I am in my warm house with a log burning and typing this post about my menu for this week. Can’t wait to try the Rustic Roast Chicken. Mm. Sounds and looks divine!

  • Sunday: Hot dogs & chips – easy peasy as we decorated the house today
  • Monday: Fannie Farmer Macaroni and Cheese and green salad – by far my favorite recipe!
  • Tuesday: Fish Tacos – tasty, quick to make, and totally yummy. I like to make a sour cream sauce – yup, sour cream and a little milk – mix and top tacos with sauce and salsa. Mm.Mm.
  • Wednesday: Orange Chicken – totally try this recipe, white rice, and veggies. This recipe taste just like your favorite Chinese orange chicken.
  • Thursday: Steak, Baked Potatoes, and veggies
  • Friday: Eating out – have to make a run out of town
  • Saturday: Rustic Roasted Chicken – found this awesome recipe on Foodgawker. Can’t wait to try it. Check out the link – love the pics – makes one so hungry!

Menu Plan Monday

I hope you all had a wonderful Thanksgiving! I apologize for not wishing everyone a Happy Thanksgiving but unfortunately we lost my brother-in-law the day before. Even though his battle with emphysema was near it’s end, it never does make it any easier to lose a loved one.

Our Thanksgiving was full of food! I even brought my own plastic containers for left overs (lol – bad, huh?). And then all weekend long I ate those left overs and pumpkin pie with Cool Whip. I feel like I gained a good 50 pounds. If anyone has any room left in their appetite for food and the week ahead, I present this week’s menu plan:

1. Steak, Mashed Potato, and Veggies 2. Turkey Enchilada Casserole and Salad 3. Broccoli Alfredo, salad, and breadsticks 4. Salmon, white rice, and baked sweet potatos with maple butter 5. Tuna Noodle Casserole and green salad 6. Turkey Burgers and fries

1. Egg & Cheese Breakfast Tacos with Salsa 2. Lemon Chicken with white rice & veggies 3. Creamy Fettuccine with Shrimp & Bacon and a Green Salad 4. Turkey, Turkey, Turkey Dinner! 5. Leftovers! Hot Turkey Sandwiches with all the fixins. Mm-Mmm. Sorry, I didn’t plan Saturday and Sunday. I am virtually stuffed just thinking about Thanksgiving day & it’s left overs. πŸ˜‰

  • Tuesday: Taco Tuesday! Home Yummy Tacos & Refried Beans
  • Wednesday: Homebaked Mac n Cheese & Salad

I am blogging off for the long holiday weekend! I am going to have fun in the sun, clean out the linen closet and daughter’s room (again). Finishing cocktail napkins, dropping stuff off to charity, play darts with husband, etc…

Menu Monday & Totally 80s Weekend

So, this weekend was pretty productive. Part of it included prepping meals for this week. Blared the New Waves Sirius radio station with the likes of Depeche Mode, XTC, New Order, and Love and Rockets and prepped away! Cutting, cooking and chopping the chicken, onions & chile peppers for the chili, cooking the bacon for the slaw, browning and cooking the filling for the bell peppers (the dish is already sitting in the fridge waiting to be popped in the oven tonight). I was pretty impressed with myself in the prepping department. Now lets see if it really makes a difference and produces more down time in the evening!
