Menu Plan Monday

Southern California is going to get 8 inches of rain! To this gal who has been experiencing high 70’s sunshine weather this is a lot of water to be dumped in one week.To offset being drowned this week, I am planning on cooking up some comfort food (hopefully the comfort won’t be put on the hips – lol).

You know, the thought of rain makes me want to bake. Maybe I will whip up some Zucchini-Pineapple Muffins (store nicely in the freezer). They will go great with my morning coffee.

Vegetarian Chili and Cornbread – We’re suppose to get 8 inches of rain all in one week! For a So. Cal girl this is a BIG Deal! To help sooth the jitters from driving home in the rain, I’m gonna cook me up some comfort lovin’! Honest Fare

Easy Lemon Pasta with Chicken – I have to admit I love the Neelys recipes on Food Network. I think it is the Southern + Food = Home Comfort. The Food Network

Cauliflower,Potato & Pea Curry with White Rice – I’m all about the comfort food this week and with an Indian Flare… all the better! Plus, I’ve been craving going completely vegetarian again. International Vegetarian Union

Grilled Salmon Caesar Salad with Toasted Garlic Bread – Something Simple, Something Yummy, and Something Healthy! Mm-mm! Need I say more? Dr. Gourmet

      Mmmm… coffee & muffins… yum. Maybe I should make some scones again. Orangette has a great scone recipe. Perhaps raspberry or blueberry?

      I wanted to change the menu up. So, I look forward to trying the pasta. Especially because I love lemon! I don’t normally put two pastas in one week, but I couldn’t help it this time. πŸ˜‰

      I have some Garam Marsala in my cupboard. I may trying adding that or a small amount of serrano chilis in the recipe to kick it up a notch. Can’t wait to try it!

    Just went grocery shopping this weekend and the receipt reminded how much I need to shop with a menu/list. I’m going to use a lot of your posts to help me out. The chili sounds awesome, I can’t get enough chili during winter. Thanks!

      At one time we were spending $1200 on food alone! Ouch. And food is always one of the top culprits to missing money. It’s good to keep a budget for this reason. πŸ˜‰

      I love chili. Especially if you have time to simmer for hours and let the flavors meld together. Mm-mm.

    I hear ya! At least we won’t have to water our lawns for a week or two :). I think I’ll try the chili and cornbread recipe. I love cornbread, yum!

      Actually I heard we may experience up to 20″ by the week’s end! Hate driving in it. Luckily do to the holiday, traffic was much lighter than usual and I didn’t hit any accidents. I hope the way back will prove to be the same. πŸ™‚

      I need to find a recipe my aunt gave me for skillet cornbread with jalapenos – it is SOOOOO good. Let me see if I can dig it up.

    Well, it’s official… I’m going to have to avoid your blog on Mondays from now on. That salmon Caesar sounds amazing… definitely kicks the crap out of my chicken and rice with veggies everyday diet!

      LOL. You should have some nice tuna where you’re at. Seared Ahi Tuna on a bed of greens with a Wasabi dressing. Mm-mm.

      Ya, I would get tired of the chicken, rice and veggies after awhile. Hence, this is not my norm menu but I was ready for a change up. I’ll let you know how the Salad turns out. πŸ˜‰

    I ventured out into my backyard today. It is a mud pit. Snow finally melted and the ground thawed just in time for the rain. Finally got some sun today.
