You’ve probably heard me rant about how my man is a Meat n’ Potatoes man. It drives me crazy sometimes! Beef, beef, beef. I should take a pic of my freezer sometime. Don’t get me wrong. I do like a tad of meat to make a meal tasty. He does cook a real good steak. But, everynight???? He could easily do that and be happy with it. LOL!
Well, it not only drives me crazy sometimes, but it causes me to regress to my Vegetarian habits. ‘Am I including enough fruits and veggies?’ ‘What can I add to my meal that is not meat’

So, what does that have to do with eggs? Well, when I get into my veggie habit, I tend to go all out for a few days. I can’t handle eating meat or eggs. Call me wierd. To me, it’s healthy and I get to do some foodie experimenting. 🙂
This Veggie Habit has me with the lowest bad cholesterol and triglycerides in the family! So there. Weird, maybe. Worth while? I say, “yes”.
I have made this dish a couple of times. It’s really very easy and you could toss just about anything into it. Although, I have to deviate from the recipe, yet.
Serves 6
Ingredients:
16 ounce block firm tofu
3 cloves garlic , peeled and sliced thin (about 1 1/2 tablespoons)
3 tablespoons diced red bell pepper
2 tablespoons olive oil
1/2 teaspoon turmeric
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3/4 cup sliced green onions or scallions or chives or 1/2 cup minced onion
2 teaspoons soy sauce
Fresh salsa
Corn tortillas
Drain the tofu and crumble it, using clean hands. Sauté the garlic and diced pepper with the olive oil in a medium sauté pan on medium heat, for about 2 minutes. Stir in the crumbled tofu first, then add turmeric, salt, pepper, green onions (scallions, chives or onions) and soy sauce. Cook the tofu for 3 more minutes, stirring occasionally. Serve with salsa and warm corn tortillas.
