Menu Plan Monday

So, did you all get your Holiday Cards mailed out? Ya, I am behind too. We just bought a 40 pack for $14 at Target. They are really pretty, too. Hopefully, my husband, with wonderful penmanship, will sign all the cards by tomorrow and I can mail them out. *cross fingers*. We did decorate our house today. Looks beautiful! We plan on getting our Noble Fir tree this week. Then it will look really pretty.

Hey, Santa just came down our block with 7 fire engines, the Grinch, and the dog. I love how they drive around the neighborhood every year for the kids. It’s really very cool. I don’t mind my taxes going for that.

Now, I am in my warm house with a log burning and typing this post about my menu for this week. Can’t wait to try the Rustic Roast Chicken. Mm. Sounds and looks divine!

  • Sunday: Hot dogs & chips – easy peasy as we decorated the house today
  • Monday: Fannie Farmer Macaroni and Cheese and green salad – by far my favorite recipe!
  • Tuesday: Fish Tacos – tasty, quick to make, and totally yummy. I like to make a sour cream sauce – yup, sour cream and a little milk – mix and top tacos with sauce and salsa. Mm.Mm.
  • Wednesday: Orange Chicken – totally try this recipe, white rice, and veggies. This recipe taste just like your favorite Chinese orange chicken.
  • Thursday: Steak, Baked Potatoes, and veggies
  • Friday: Eating out – have to make a run out of town
  • Saturday: Rustic Roasted Chicken – found this awesome recipe on Foodgawker. Can’t wait to try it. Check out the link – love the pics – makes one so hungry!

    one more thing, you cook everyday chica?! wow, i’m super duper impressed. are leftovers not welcomed in your home? i have a friend and they do not eat leftovers so she cooks just enough for that day’s meal.

      Yes, we cook everyday! My husband cooks, too. So, we switch cooking between us. And I usually take the left overs for my work lunch. I know people that don’t eat leftovers…wierd! I don’t how she cooks just enough for that day’s meal. No, actually I could do it, but my hubby cooks for an army. LOL.

        i’m w/u on the leftovers. in fact, many things taste even better the next day.

        oh, so you and hubby love take turns. that’s awesome. okay, it doesn’t sound as intense as i imagined when i thought you were doing it all solo. teamwork is awesome.

      I love fish tacos! There is a great place at Ocean Beach (san diego) that has some great mahi mahi tacos. Makes me think of that place. They are so easy to make! Works so well for the hustle and bustle of the work week. And they are simple enough that even you could make them! LOL. No cook? Couldn’t imagine. It’s so much fun!

      Michael’s craft store has 70% off their Christmas cards right now! I would of bought from there but we just bought ours a store before. Check them out!

    oops, i told a fib, i have another thing;-). i just looked at the mac & cheese recipe, do you think i would get the same results if i just used a pint of half & half to replace the cup of milk and one cup of cream?

      Yes. I’ve used the half and half before. Works fine.

      Have I told you my daughter’s arguement with half & half? She says, “half and half of what???”. She is so adamant that is should say “half milk & half cream”. I try to argue with her, but she doesn’t want to hear it. It’s so funny.

      Caution: this recipe is in no way low fat! But its oh so good!

        LOL! she has a point.

        actually the mac&chesse recipe is pretty close to the recipe i make, except i use half & half (cheaper since i don’t drink or usually purchase milk … i’m an almond milk kind of girl), i don’t add breadcrumbs and i do add a pinch of ground mustard. sometimes i’ll use evaporated milk if that’s all i have on hand.

          I love almond milk, too! You don’t have to worry about what’s in it. I actually bought raw almonds to make milk, but haven’t gotten around to it. Must do *reminder*.

          I’ve added the ground mustard before but wasn’t partial to the taste. However, I do add chili powder to my breadcrumbs. Mm-Mm. Tonight is going to be yummy!

    My holiday cards are ready to go in the mailbox, I just have to swing down and drop them off. I’m impressed your husband signs them – I just sign his name in his handwriting.

      I like my husband’s handwriting so much better than mine. He has that left hand swirlies – looks so nice. πŸ˜‰ And good for you on getting the cards done and ready to be dropped off.

      The holidays are going quite smooth for me right now. I am quite glad and hope it stays this way! How about you? The holidays treating you well?

        This is the first year I actually went into the holidays with a plan – not just a budget, but an actual timeline of what needs to be done when. And it is awesome! I am so much more relaxed, not feeling rushed at all. I finished my shopping, the cards are done, the tree is up & ready for ornaments tonight. I’m glad things are going smoothly for you too!

          did you find generic holiday timeline on the internet or did you make your own?

          We are getting our tree this week or weekend. Should be fun. You have a wonderful time decorating tonight!

            I made my own based on our plans to be out of town for most of the next 2 weekends. Last year we took a ski trip in December and it threw everything off and I was stressed out the entire month. This year I’m trying to stay on top of it all.

    how do i get set-up w/the weekly menu planning. i want to give it a try. i went to the orgjunkie website but i got lost. perhaps it’s becuz i’m at the end of a work day and therefore have no more mental energy to expend. πŸ˜‰

        you know it wouldn’t be like me to stick to the recipe exactly;-). i added some mushrooms and only had an anaheim pepper on hand, so that’s what i used. i also used block chedder instead of sliced, bcuz again, that’s what i had on hand. i couldn’t find cotija so i used feta.

    Er, sent out? I haven’t even BOUGHT cards yet. Yipes! One of these days, I’ll actually do real meal planning instead of just planning day to day. But it’s kind of fun this way πŸ˜‰

      I just notice if I don’t plan, my food bill is way high. Keeps us in check.

        I was planning to, but we’ll see. I’m not going to freak out about it if I don’t get around to it in time, though. It’s not that big a deal! πŸ™‚

        And meal planning is pretty much essential for saving money, I’ve just been traveling again so it’s a little unsettled.
