I hope you all had a wonderful Thanksgiving! I apologize for not wishing everyone a Happy Thanksgiving but unfortunately we lost my brother-in-law the day before. Even though his battle with emphysema was near it’s end, it never does make it any easier to lose a loved one.
Our Thanksgiving was full of food! I even brought my own plastic containers for left overs (lol – bad, huh?). And then all weekend long I ate those left overs and pumpkin pie with Cool Whip. I feel like I gained a good 50 pounds. If anyone has any room left in their appetite for food and the week ahead, I present this week’s menu plan:
1. Steak, Mashed Potato, and Veggies 2. Turkey Enchilada Casserole and Salad 3. Broccoli Alfredo, salad, and breadsticks 4. Salmon, white rice, and baked sweet potatos with maple butter 5. Tuna Noodle Casserole and green salad 6. Turkey Burgers and fries
Christine: Warm thoughts and a hug from afar on your family’s loss. May memories of your brother-in-law lighten your hearts in the days to come.
Well, he was a fighting Irish ‘boy’ with the red hair and fighting attitude. So we are laughing at how much he fit that mold. Thank you April.
i so need to do better with planning my meals. why am i so inconsistent?! geez!!!!
Cuz it’s easier NOT to plan. π
I need some good veggie dinner meals. Have any? I’m tired of the same ole thing.
I’m really sorry for your loss…. Your menu for this week looks great!
Thank you, Canadian Saver. It was a good day for the family to bring up great memories of my Brother in law.
As for the menu… I can’t wait for tonights Broccoli Alfredo. Mmm.. must be hungry right now. LOL.
Did you make the turkey enchilada casserole? It looks and sounds amazing. I’m such a sucker for cheese.
Hi Shawanda,
I didn’t get to try the turkey enchilada casserole, as I would have liked. My carnivorous husband of mine decided to cook his usual beef enchilada casserole. I’ll be sure to tell you how it is when I do get to try it. π
