Me in the 80s
So, this weekend was pretty productive. Part of it included prepping meals for this week. Blared the New Waves Sirius radio station with the likes of Depeche Mode, XTC, New Order, and Love and Rockets and prepped away! Cutting, cooking and chopping the chicken, onions & chile peppers for the chili, cooking the bacon for the slaw, browning and cooking the filling for the bell peppers (the dish is already sitting in the fridge waiting to be popped in the oven tonight). I was pretty impressed with myself in the prepping department. Now lets see if it really makes a difference and produces more down time in the evening!

Tuesday: Corned Beef, Hot Apple Slaw with Bacon, & Red Potatoes
Wednesday: Bacon Cheeseburgers, ranch pasta salad, and Lay’s potato chips
Thursday: PC White Chicken Chili, Cornbread, and side salad
Friday: Eat Out
I’ve never had stuffed bell peppers. Can’t wait to try them tonight!
Especially can’t wait to try the cabbage slaw. I have been wanting to make this german side dish for sometime. Yum!
So, I also took up a new hobby with my daughter this weekend. More on that soon. I have to just finish up a couple of steps before I can reveal. Lol! Hope you had a great weekend and happy Monday!

@ sharon rose: I love the 80s. Did you hear fluorescent clothes are making a comeback? Crazy! I feel old. I was like in 6th grade, junior high when this was fashion. And boy, did I love it! LOL! Now my daughter… she totally wants to wear fluorescent yellow! Yikes!
@ NLA: lol! I truly miss the days. TOTALLY! lol! Yes, share the 80s photos. I really wish I had more photos. Oh ya, and I get the digital radio on my TV. Yes, we have a hefty bill, too. My DH couldn’t live w/out the bells and whistles of digital TV!
@ sharon: i hope it turns out great. They do look mighty yummy. I think next time I am going to make them with ground turkey meat. I will let you know how yummy they are. 🙂
