Day 6: It’s Thursday Night! I love em’!

Day 6:
It’s a Supernatural Night!

It’s the night when the beloved angel, Castiel (who hyperstimulates my senses with his cute demeanor and large angel wings), reverts back to his human life. ahhh…. See why I like Thursday nights at 9pm? πŸ˜‰

Anyway, this health challenge is almost at an end… I am going to miss it. I hope that I do keep this challenge regimen up to par, because I do feel better in body and mind. I feel leaner and a pound or two lighter. The exercise has also increased my endorphines allowing me to be clearer in mind and more joyful. This is something I have been telling myself to do and this challenge was just what I needed! Thank you, Frugal Trenches for kicking me into gear. Today’s meal plan:

Breakfast:
Nibble of a blueberry scone and hot green tea
(just a nibble because I know they are on the “not good” list. The nibble satisfied my craving).

Snack: 1/2 peanut butter sandwich

Lunch:
Was going to be a Peanut Butter sandwich, but I ended up craving something else last minute. I whipped up a mushroom, green onion, parmesean omelet 10 minutes before I was to leave the house. Served with a few of slices of baby yukon potatos and a side of white rice (its the Filipino in me).MMmm….

Snack: Banana and hot green tea

Dinner:
Pasta salad, zucchini fries, and sliced pears

oops, forgot to take dinner pic. here is leftovers for tomorrow’s lunch

The baked zucchini fries… hmmm… got my daughter to eat her veggies. Smart huh?! And the mushroom and pea orzo I had the other day…. got her to eat her veggies too. I think I am onto something because she is seriously not a veggie eater! πŸ˜‰

    mmmmm. looks great! Is it special rice you’re using? Because I’ve never seen those sticky “balls” around here, nor would I know how to make them. They seem way more lunchbox-suitable than the rice I used to take which tended to be a bit dry after a night in the fridge..

    @ Happy: Thank U. I am trying, but it is not always easy to stay on course. Thanks for stopping by!

    @ Meyser: this is actually plain calrose rice or you could make a batch of sushi rice, let it cool and then I saran wrap individual portions, plop them in freezer.

    When I need one I stick in my lunch box and it is defrosted by lunch time! Its a great time saving tip. πŸ˜‰ And its not dry at all like when you leave it in the fridge overnight.
