Day 6: It’s Thursday Night! I love em’!

Day 6:
It’s a Supernatural Night!

It’s the night when the beloved angel, Castiel (who hyperstimulates my senses with his cute demeanor and large angel wings), reverts back to his human life. ahhh…. See why I like Thursday nights at 9pm? ;-)

Anyway, this health challenge is almost at an end… I am going to miss it. I hope that I do keep this challenge regimen up to par, because I do feel better in body and mind. I feel leaner and a pound or two lighter. The exercise has also increased my endorphines allowing me to be clearer in mind and more joyful. This is something I have been telling myself to do and this challenge was just what I needed! Thank you, Frugal Trenches for kicking me into gear. Today’s meal plan:

Breakfast:
Nibble of a blueberry scone and hot green tea
(just a nibble because I know they are on the “not good” list. The nibble satisfied my craving).

Snack: 1/2 peanut butter sandwich

Lunch:
Was going to be a Peanut Butter sandwich, but I ended up craving something else last minute. I whipped up a mushroom, green onion, parmesean omelet 10 minutes before I was to leave the house. Served with a few of slices of baby yukon potatos and a side of white rice (its the Filipino in me).MMmm….

Snack: Banana and hot green tea

Dinner:
Pasta salad, zucchini fries, and sliced pears

The baked zucchini fries… hmmm… got my daughter to eat her veggies. Smart huh?! And the mushroom and pea orzo I had the other day…. got her to eat her veggies too. I think I am onto something because she is seriously not a veggie eater! ;)

Day 5: Starting to Feel Healthy

Well, my husband had a doctor’s appointment this morning. So, it gave me an excuse to take a few hours off work. :) And we spent a nice, quiet, comforting morning having breakfast together. We also discussed the Growth Engine Exercise I posted yesterday. And you know what? We both seem to be on the same page. Kudos!

I told him that the mission of opening a Farmer’s Market requires getting to know about all the operations with in it (baking, produce, food, beer/wine knowledge, cheese knowledge, crafting, retail…). And that the mission, right now, while paying down our debt is to take the time to learn about each one. Nike’s “just do it” comes to mind. Well, I will definitely post all more about it later: the plan, the mission, the steps, the journey…

Breakfast:
Oatmeal with brown sugar & milk, 1 slice whole wheat toast w/ strawberry jam, 2 slices of bacon, 1 scrambled egg, and coffee. MMmmmm…

Lunch:
Left over Mushroom & Pea Orzo/Risotto, couple slices of BBQ chicken, warm German apple slaw and Green Tea (I love the way the house smells when I cook apple slaw!)

Snack: Banana

Dinner:
Enchilada Casserole, Refried beans, and salad.

Dessert: snickerdoodles (my boss is making me stir a batch together for her. she made me bribe her for those few hours off this morning. lol!)

Exercise:
again, a 1.5 mile walk around campus. Actually, its not that I intended to do so because I got to work late. But, if you get to work late you have to park out in the boonies. And although we have trams to drive us around… I opted to walk! I made the conscious effort to partake in a physical activity.

And to top it off, I actually am feeling healthy, lean, and my attitude towards life has perked up. Not to mention that I am enjoying making conscious choices about the foods I am eating.

Finding Your Growth Engine…Finding Yourself

Remember I told you that I completed an exercise that is helping to align myself with the person I really want to be? Well, I wanted to share with you that exercise.

This exercise comes from 7 million in 7 year’s team in training website. Even if you are not searching to become the next millionaire, it has some very worthy exercises to complete. I am rather enjoying the self discovery. :)

Called Finding your Growth Engine. It helps you to figure out what it is going to take to reach your number, your financial goal. And, as you can see… it helped me figure out what I really am all about and where it is I want to go.

I mentioned to you lately that I have been feeling this change within me. That it is time to live the life I yearn to wake up to each morning. In fact, in my New Year Resolution 2009 I mentioned the year is about “Keeping it Simple”… about connecting with life, friend’s, family & community. It’s going to be about finding the true sense of my life.

“Keeping it Simple”… Just doing.

Well, I have found out what I really want to do! But, a master plan has to start out with baby steps. Well, at least in my case it needs to be that way.

Master Plan = open Farm Market: Fresh produce, bakery, nuts, cheese, beer and wine. Fresh flowers. A small cafe’. A place to come by and relax. Listen to live music.

Baby steps…

Well, I would love your opinion. The object: to find the commonalities within the four rows. What kinds of things stand out that I could do to help raise money for the master plan now?
I see:

  • craft business: candle making, soap making
  • writing: cookbook or craft book
  • teaching a local craft or food class
  • But, I would like to see what potentials you make from this picture.

    Day 3

    Ate well, but exercise not completed today unless stress counts. I had a pharmaceutical monitor come in today to keep me stressed and busy. So, a walk was out of the question. But I am definitely back on track tomorrow!

    Breakfast: Hot tea, one scrambled egg and two sausage links

    Work Lunch:


    Left over broccoli & corn, white rice, strawberry yogurt, and one half peanut butter sandwich.

    Dinner:

    Green salad w/cucumber, bacon bits, cheese, dried cranberries, purple onion, sunflower seeds, tomato and green onion; cheese toast; and 2 slices of steak from last night

    Sorry for the quick post, but I need to veg out today after such a hectic day. Happy Eating!

    Day 2 & Meal Plan Monday

    Day 2: Moderate Success

    Breakfast: Green Tea, Whole Wheat Toast & an egg cooked over easy
    (only green tea & silence are pictured here)

    Lunch: Homemade mac & cheese with green grapes & another Green Tea (love my green tea!)

    Dinner: Steak, baked potato & steamed broccoli/corn with lemon pepper.

    Exercise: not much accomplished in this department. However, I did clean house by vacuuming, laundry, and then cleaned the kid’s rooms. Also, I finished up the gardening by laying down some bark to keep the weeds in check.
